Ingredients 

Main Ingredients

  • 8 cups Whole Milk
  • 1 cup Heavy Cream
  • ½ teaspoon Salt
  • 3 tablespoon Lemon Juice

Instructions 

  1. 1. In a large pot, combine milk, cream, and salt. Heat over medium heat until the mixture reaches 190°F (88°C).
  2. 2. Remove from heat and add lemon juice. Stir gently and let sit for 5 minutes.
  3. 3. Line a strainer with cheesecloth and place it over a large bowl. Pour the mixture into the strainer and let it drain for 20-30 minutes.
  4. 4. Transfer the ricotta to a bowl and use immediately or refrigerate.
