Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cucumber diced
  • 1 tomato diced
  • ½ cup parsley chopped
  • ¼ cup mint chopped
  • ¼ cup olive oil
  • 2 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  3. 3. Remove from heat and let quinoa cool.
  4. 4. In a large mixing bowl, combine the cooled quinoa, cucumber, tomato, parsley, and mint.
  5. 5. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  6. 6. Pour the dressing over the quinoa mixture and toss to combine.
  7. 7. Serve chilled or at room temperature.
