Quinoa Tabbouleh Recipe
A refreshing and healthy salad made with quinoa, fresh herbs, and vegetables.

Main Ingredients
- 1 cup quinoa rinsed
- 2 cups water
- 1  cucumber diced
- 1  tomato diced
- ½ cup parsley chopped
- ¼ cup mint chopped
- ¼ cup olive oil
- 2 tablespoon lemon juice freshly squeezed
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1. Rinse the quinoa under cold water. 
- 2. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. 
- 3. Remove from heat and let quinoa cool. 
- 4. In a large mixing bowl, combine the cooled quinoa, cucumber, tomato, parsley, and mint. 
- 5. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. 
- 6. Pour the dressing over the quinoa mixture and toss to combine. 
- 7. Serve chilled or at room temperature.
