Ingredients

  • 1 cup Pumpkin puree
  • 1 cup Milk
  • 1 large Egg
  • 2 tablespoon Melted butter
  • 2 tablespoon Sugar
  • 1 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • ½ teaspoon Ground ginger
  • ¼ teaspoon Ground nutmeg
  • ½ teaspoon Salt

Instructions 

  1. In a mixing bowl, whisk together the pumpkin puree, milk, egg, melted butter, and sugar.
  2. In another bowl, mix the flour, baking powder, cinnamon, ginger, nutmeg, and salt.
  3. Combine the wet and dry ingredients, stirring until just mixed.
  4. Heat a griddle over medium heat and lightly grease it.
  5. Pour ¼ cup of batter for each pancake onto the griddle. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with your favorite toppings.
