Ingredients 

Dough

  • 2 cups All-purpose flour
  • 1 teaspoon Salt
  • 1 cup Water warm

Filling

  • 2 cups Mashed potatoes
  • 1 cup Cheddar cheese shredded
  • 1 medium Onion finely chopped
  • 2 tablespoon Butter

Instructions 

  1. In a large bowl, combine flour and salt. Gradually add warm water, mixing until a dough forms. Knead the dough on a floured surface until smooth. Cover and let rest for 30 minutes.
  2. For the filling, melt butter in a skillet over medium heat. Add onions and cook until soft. Mix onions with mashed potatoes and shredded cheese. Season with salt and pepper to taste.
  3. Roll out the dough on a floured surface to about ⅛ inch thickness. Cut into circles using a glass or cookie cutter. Place a spoonful of filling in the center of each circle. Fold the dough over and press the edges to seal.
  4. Bring a large pot of salted water to a boil. Cook perogies in batches until they float to the top, about 3-4 minutes. Remove with a slotted spoon and drain.
  5. Optional: Fry boiled perogies in a skillet with a bit of butter until golden brown on both sides.
