Main Ingredients
- 1 cup Pearl couscous uncooked
- 1 cup Cherry tomatoes halved
- 1 cup Cucumber diced
- ¼ cup Red onion finely chopped
- ¼ cup Feta cheese crumbled
- ¼ cup Olives sliced
- 2 tablespoon Olive oil
- 1 tablespoon Lemon juice freshly squeezed
- 1 teaspoon Salt to taste
- ½ teaspoon Black pepper freshly ground
- ¼ cup Fresh parsley chopped
1. Cook the pearl couscous according to the package instructions. Drain and let it cool.
2. In a large mixing bowl, combine the cooked couscous, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
4. Pour the dressing over the couscous mixture and toss to combine.
5. Garnish with fresh parsley before serving.
