Ingredients 

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 2 cups Mixed greens
  • 1 cup Cherry tomatoes, halved
  • ½ cup Red onion, thinly sliced
  • 1 tablespoon Olive oil
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat.
  2. 2. Add the shrimp and cook until pink and opaque, about 3-4 minutes per side.
  3. 3. In a large mixing bowl, combine mixed greens, cherry tomatoes, and red onion.
  4. 4. Add the cooked shrimp to the bowl.
  5. 5. Drizzle with lemon juice, and season with salt and black pepper. Toss to combine.
  6. 6. Serve immediately.
