Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 carrots Carrots, diced
  • 2 stalks Celery, diced
  • 1 can Diced Tomatoes 14.5 oz
  • 1 can Cannellini Beans 15 oz, drained and rinsed
  • 4 cups Chicken Broth
  • 1 cup Ditalini Pasta
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • to taste Salt and Pepper
  • 1 cup Fresh Spinach optional
  • ¼ cup Grated Parmesan Cheese for serving

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onion, minced garlic, diced carrots, and diced celery. Cook until vegetables are tender.
  3. 3. Stir in diced tomatoes, cannellini beans, chicken broth, ditalini pasta, dried oregano, and dried basil. Bring to a boil.
  4. 4. Reduce heat and simmer until pasta is tender, about 10-12 minutes.
  5. 5. Season with salt and pepper to taste. Stir in fresh spinach if using.
  6. 6. Serve hot with grated Parmesan cheese on top.
