Ingredients 

Main Ingredients

  • 1 lb white fish fillets (like cod or tilapia)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 0.5 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 0.5 cup diced red onion
  • 1 avocado, sliced
  • 0.25 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Place fish on a baking sheet, drizzle with olive oil, and season with chili powder, cumin, salt, and pepper.
  3. Bake for 10 minutes or until fish flakes easily with a fork.
  4. While fish is baking, prepare the bowls by dividing rice, black beans, corn, tomatoes, and red onion among four bowls.
  5. Top with baked fish, avocado slices, and cilantro.
  6. Serve with lime wedges on the side.
