Main Ingredients
- 4 slices Bacon diced
- 1 cup Onion chopped
- 2 cloves Garlic minced
- 2 cups Potatoes peeled and diced
- 2 cups Clam Juice
- 1 cup Heavy Cream
- 2 cans Clams drained and chopped
- to taste Salt
- to taste Black Pepper
1. In a large pot, cook the bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pot.
2. Add the chopped onion to the pot and cook until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
3. Stir in the diced potatoes and clam juice. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
4. Add the heavy cream and chopped clams. Heat through but do not boil. Season with salt and black pepper to taste.
5. Serve hot, garnished with the crispy bacon.
