Ingredients 

Main Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 jalapeño, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 cup corn kernels
  • 1 lime, juiced
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and jalapeño. Sauté until softened.
  3. Stir in cumin and chili powder. Cook for another minute.
  4. Pour in chicken broth and diced tomatoes. Bring to a boil.
  5. Add corn and shrimp. Cook until shrimp are pink and cooked through.
  6. Stir in lime juice. Season with salt and pepper.
  7. Garnish with fresh cilantro before serving.
