Mediterranean Seafood Stew

Main Ingredients
- 2 tablespoon Olive Oil
- 1 large Onion, chopped
- 3 cloves Garlic, minced
- 1 can Diced Tomatoes (14.5 oz)
- 4 cups Fish Stock
- 1 lb White Fish Fillets, cut into chunks
- 1 lb Shrimp, peeled and deveined
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 1 teaspoon Paprika
- 1 teaspoon Dried Oregano
- ¼ cup Fresh Parsley, chopped
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Add diced tomatoes and fish stock. Bring to a simmer.
Add white fish chunks and shrimp. Cook until seafood is just cooked through, about 5-7 minutes.
Season with salt, pepper, paprika, and oregano. Stir well.
Garnish with chopped fresh parsley before serving.
