Main Ingredients
- 2 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup diced tomatoes
- 4 cups fish stock
- 1 cup white wine
- 1 lb mixed seafood (shrimp, mussels, clams, fish)
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- to taste salt and pepper
- 1 tablespoon lemon juice
- ¼ cup fresh parsley, chopped
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Stir in diced tomatoes, fish stock, and white wine. Bring to a boil.
Add mixed seafood, oregano, thyme, salt, and pepper. Reduce heat and simmer for 10-15 minutes.
Stir in lemon juice and fresh parsley just before serving.
