- 1 cup Vegetable oil
- 1 whole Egg at room temperature
- 1 tablespoon Lemon juice freshly squeezed
- 1 teaspoon Dijon mustard
- ½ teaspoon Salt
1. In a blender, combine egg, lemon juice, Dijon mustard, and salt.
2. Blend on medium speed until well combined.
3. With the blender running, slowly add the vegetable oil in a steady stream until the mixture thickens and emulsifies.
4. Transfer the mayonnaise to a mixing bowl and whisk to ensure it's smooth and creamy.
5. Store in an airtight container in the refrigerator for up to one week.
