Ingredients 

Main Ingredients

  • 1 lb Shrimp peeled and deveined
  • 2 Mangoes diced
  • 1 cup Cucumber diced
  • ¼ cup Red Onion thinly sliced
  • ¼ cup Cilantro chopped
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lime Juice freshly squeezed
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper freshly ground

Instructions 

  1. 1. Heat a skillet over medium heat and add 1 tablespoon of olive oil.
  2. 2. Add shrimp to the skillet and cook until pink and opaque, about 3-5 minutes. Set aside to cool.
  3. 3. In a large mixing bowl, combine mangoes, cucumber, red onion, and cilantro.
  4. 4. Add the cooked shrimp to the bowl.
  5. 5. In a small bowl, whisk together the remaining olive oil, lime juice, salt, and black pepper.
  6. 6. Pour the dressing over the salad and toss to combine.
  7. 7. Serve immediately or chill in the refrigerator for 30 minutes before serving.
