Lobster Risotto

Main Ingredients
- 1 lb Lobster meat cooked and chopped
- 1 cup Arborio rice
- 4 cups Chicken broth warmed
- 1 cup White wine
- 1 cup Parmesan cheese grated
- 1 small Onion finely chopped
- 2 cloves Garlic minced
- 2 tablespoon Olive oil
- 2 tablespoon Butter
- to taste Salt
- to taste Black pepper freshly ground
1. Heat the olive oil and butter in a large pot over medium heat. Add the onion and garlic, and cook until softened.
2. Add the Arborio rice and cook, stirring constantly, for about 2 minutes until the rice is lightly toasted.
3. Pour in the white wine and cook until it's mostly absorbed by the rice.
4. Add the warm chicken broth one cup at a time, stirring frequently. Wait until the broth is mostly absorbed before adding more.
5. Continue this process until the rice is creamy and cooked through, about 20 minutes.
6. Stir in the chopped lobster meat and grated Parmesan cheese. Season with salt and freshly ground black pepper to taste.
7. Serve immediately, garnished with additional Parmesan cheese if desired.
