Ingredients

  • 2 cups lobster meat, cooked and chopped
  • ¼ cup butter
  • ¼ cup all-purpose flour
  • 2 cups heavy cream
  • ¼ cup dry sherry
  • 4 large egg yolks beaten
  • ½ teaspoon salt
  • ¼ teaspoon cayenne pepper

Instructions 

  1. Melt butter in a saucepan over medium heat.
  2. Stir in flour and cook for 1-2 minutes.
  3. Gradually whisk in the heavy cream until smooth.
  4. Add sherry, salt, and cayenne pepper. Cook until thickened.
  5. Temper the egg yolks by adding a small amount of the hot mixture to them, then return to the saucepan.
  6. Stir in lobster meat and cook until heated through.
