Main Ingredients
- 2 cups lobster meat, cooked and chopped
- ¼ cup butter
- ¼ cup all-purpose flour
- 2 cups heavy cream
- ¼ cup dry sherry
- 4 large egg yolks beaten
- ½ teaspoon salt
- ¼ teaspoon cayenne pepper
Melt butter in a saucepan over medium heat.
Stir in flour and cook for 1-2 minutes.
Gradually whisk in the heavy cream until smooth.
Add sherry, salt, and cayenne pepper. Cook until thickened.
Temper the egg yolks by adding a small amount of the hot mixture to them, then return to the saucepan.
Stir in lobster meat and cook until heated through.
