Lobster and Chive Bisque

Ingredients 

Main Ingredients

  • 2 lbs Lobster cooked and shelled
  • 2 tablespoon Butter
  • 1 cup Chopped Onion
  • 2 cloves Garlic minced
  • 1 cup Tomato Paste
  • 4 cups Fish Stock
  • 1 cup Heavy Cream
  • 1 tablespoon Chives chopped
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. In a large pot, melt the butter over medium heat.
  2. 2. Add the chopped onion and minced garlic, and cook until softened.
  3. 3. Stir in the tomato paste and cook for another 2 minutes.
  4. 4. Add the fish stock and bring to a boil. Reduce heat and simmer for 20 minutes.
  5. 5. Add the cooked lobster meat and simmer for another 10 minutes.
  6. 6. Use a blender to puree the soup until smooth.
  7. 7. Return the soup to the pot and stir in the heavy cream. Heat through but do not boil.
  8. 8. Season with salt and black pepper to taste.
  9. 9. Serve hot, garnished with chopped chives.
