Lemony Shrimp Over Brown Rice

Main Ingredients
- 1 cup brown rice
- 2 cups water
- 1 lb shrimp, peeled and deveined
- 2 tablespoon olive oil
- 3 cloves garlic, minced
- 1 lemon, zested and juiced
- Salt and pepper to taste
- Fresh parsley, chopped (optional)
Cook brown rice in water according to package instructions.
In a large skillet, heat olive oil over medium heat.
Add garlic and sauté until fragrant.
Add shrimp, lemon zest, and juice. Cook until shrimp is pink and opaque.
Season with salt and pepper.
Serve shrimp over brown rice, garnish with parsley if desired.
