  • 2 tablespoon Butter
  • 2 medium Leeks sliced
  • 4 cups Chicken Broth
  • 4 medium Potatoes peeled and diced
  • 1 lb Shrimp peeled and deveined
  • to taste Salt and Pepper

Instructions 

  1. 1. In a large pot, melt the butter over medium heat.
  2. 2. Add the sliced leeks and cook until softened, about 5 minutes.
  3. 3. Add the chicken broth and diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  4. 4. Use a blender to puree the soup until smooth. Return to the pot.
  5. 5. Add the shrimp and cook until pink and opaque, about 3-4 minutes. Season with salt and pepper to taste.
