Ingredients

  • 4 pieces Eggs
  • 2 tablespoons Sugar
  • 1 tablespoon Mirin
  • 1 pinch Salt
  • 1 teaspoon Soy sauce

Instructions 

  1. 1. Crack the eggs into a bowl and whisk them well.
  2. 2. Add sugar, mirin, salt, and soy sauce to the eggs and mix well.
  3. 3. Heat a non-stick pan over medium heat and lightly oil it.
  4. 4. Pour a thin layer of the egg mixture into the pan and cook until set but not browned.
  5. 5. Roll the cooked egg to one side of the pan. Pour another thin layer of the egg mixture into the pan, lifting the rolled egg to let the uncooked egg flow underneath. Cook until set.
  6. 6. Repeat the process until all the egg mixture is used up. Remove from the pan and let it cool slightly before slicing.
