Ingredients 

Main Ingredients

  • 1 lb mixed seafood (shrimp, calamari, mussels)
  • ¼ cup olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • ¼ cup fresh parsley, chopped
  • Salt and pepper to taste
  • ½ cup cherry tomatoes, halved
  • ¼ cup red onion, thinly sliced

Instructions 

  1. Cook the seafood in boiling water for 3-5 minutes until just done. Drain and let cool.
  2. In a large bowl, whisk together olive oil, garlic, lemon juice, parsley, salt, and pepper.
  3. Add the cooked seafood, cherry tomatoes, and red onion to the bowl. Toss to coat.
  4. Chill in the refrigerator for at least 1 hour before serving.
