Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 4 cups Chicken broth
  • 1 cup Mushrooms, sliced
  • 1 cup Bamboo shoots, julienned
  • 2 tablespoon Soy sauce
  • 2 tablespoon Rice vinegar
  • 1 tablespoon Chili paste
  • 1 teaspoon Sesame oil
  • 2 tablespoon Cornstarch mixed with 2 tablespoon water
  • 2 Eggs, beaten
  • 2 scallions Scallions, chopped
  • 1 teaspoon White pepper

Instructions 

  1. 1. In a pot, bring the chicken broth to a boil.
  2. 2. Add mushrooms, bamboo shoots, soy sauce, rice vinegar, and chili paste. Simmer for 5 minutes.
  3. 3. Add shrimp and cook until they turn pink, about 3 minutes.
  4. 4. Stir in the cornstarch mixture and cook until the soup thickens.
  5. 5. Slowly pour in the beaten eggs while stirring the soup to create egg ribbons.
  6. 6. Add sesame oil, white pepper, and chopped scallions. Serve hot.
