Herbed Scalloped Potatoes and Onions
A comforting side dish of thinly sliced potatoes and onions, baked in a creamy herb sauce.

Main Ingredients
- 4 cups thinly sliced potatoes
- 1 cup thinly sliced onions
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1.5 cups milk
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
Preheat oven to 375°F (190°C).
In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes.
Gradually whisk in milk, cooking until the mixture thickens and bubbles.
Stir in salt, pepper, thyme, and rosemary.
Layer half of the potatoes and onions in a greased baking dish. Pour half of the sauce over the top. Repeat layers.
Cover with foil and bake for 45 minutes. Uncover and bake for an additional 15 minutes, or until potatoes are tender and top is golden brown.
