Instructions
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and minced garlic, and sauté until the onion is translucent.
Add the diced tomatoes and cook for another 5 minutes.
Pour in the fish stock and bring to a boil.
Add the mixed seafood, salt, and black pepper. Reduce heat and simmer for 10-15 minutes.
Stir in the lemon juice and fresh parsley. Serve hot.
