Greek Pasta Salad with Shrimp

Salad Ingredients
- 8 oz Pasta any short pasta
- 1 lb Shrimp peeled and deveined
- 1 cup Cherry Tomatoes halved
- 1 cup Cucumber diced
- ½ cup Red Onion thinly sliced
- ½ cup Kalamata Olives pitted and halved
- ½ cup Feta Cheese crumbled
Dressing Ingredients
- ¼ cup Olive Oil
- 2 tablespoon Red Wine Vinegar
- 1 teaspoon Dried Oregano
- 1 clove Garlic minced
- to taste Salt and Pepper
1. Cook the pasta according to package instructions. Drain and set aside.
2. In a large pot, bring water to a boil and cook the shrimp until pink and opaque, about 3-4 minutes. Drain and set aside.
3. In a large mixing bowl, combine the cooked pasta, shrimp, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
4. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, garlic, salt, and pepper.
5. Pour the dressing over the salad and toss to combine. Serve chilled or at room temperature.
