Ingredients

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup kalamata olives, pitted and sliced
  • ½ cup feta cheese, crumbled
  • ¼ cup extra virgin olive oil
  • 2 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Instructions 

  1. 1. Cook the orzo pasta according to package instructions. Drain and rinse under cold water.
  2. 2. In a large mixing bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  3. 3. In a small bowl, whisk together the olive oil, red wine vinegar, and dried oregano. Season with salt and pepper to taste.
  4. 4. Pour the dressing over the salad and toss to combine. Serve immediately or chill in the refrigerator for later.
