Ingredients 

Main Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 lb shrimp, peeled and deveined
  • 1 avocado, sliced
  • 1 can black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • ¼ cup red onion, diced
  • ¼ cup cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoon olive oil
  • Salt and pepper to taste

Instructions 

  1. Cook quinoa in water according to package instructions.
  2. In a skillet, heat olive oil over medium heat. Add shrimp, season with salt and pepper, and cook until pink, about 3-4 minutes per side.
  3. In a large bowl, combine cooked quinoa, shrimp, avocado, black beans, cherry tomatoes, red onion, and cilantro.
  4. Drizzle with lime juice and toss to combine. Season with additional salt and pepper to taste.
