Goan Prawn Pulao
A delicious and aromatic rice dish with prawns, spices, and coconut milk, typical of Goan cuisine.

Main Ingredients
- 1 cup Basmati rice rinsed and soaked for 30 minutes
- 250 grams Prawns cleaned and deveined
- 1 cup Coconut milk
- 1 large Onion sliced
- 2 cloves Garlic minced
- 1 inch Ginger minced
- 2 units Green chilies slit
- 1 teaspoon Turmeric powder
- 1 teaspoon Cumin seeds
- 1 teaspoon Garam masala
- 2 tablespoon Oil
- to taste Salt
- 2 cups Water
- 1 handful Coriander leaves chopped, for garnish
Heat oil in a large pot over medium heat. Add cumin seeds and let them splutter.
Add sliced onions and sauté until golden brown.
Add minced garlic, ginger, and green chilies. Sauté for a minute.
Add turmeric powder and garam masala. Stir well.
Add prawns and cook until they turn pink.
Drain the soaked rice and add it to the pot. Stir gently to mix.
Add coconut milk, water, and salt. Bring to a boil.
Reduce heat to low, cover, and simmer until the rice is cooked and liquid is absorbed, about 20 minutes.
Garnish with chopped coriander leaves and serve hot.
