Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 2 cups Mixed greens
  • 1 cup Cherry tomatoes, halved
  • ¼ cup Red onion, thinly sliced
  • ¼ cup Olive oil
  • 2 tablespoon Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic, minced
  • to taste Salt and pepper

Instructions 

  1. 1. In a mixing bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper to make the dressing.
  2. 2. Heat a skillet over medium heat and cook the shrimp until pink and opaque, about 2-3 minutes per side.
  3. 3. In a large bowl, combine mixed greens, cherry tomatoes, and red onion.
  4. 4. Add the cooked shrimp to the salad and drizzle with the dressing. Toss to combine.
  5. 5. Serve immediately.
