Ingredients 

Ravioli Dough

  • 2 cups All-purpose flour
  • 3 Large eggs
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt

Cheese Filling

  • ½ cup Ricotta cheese
  • ½ cup Mozzarella cheese, shredded
  • ¼ cup Parmesan cheese, grated
  • ¼ cup Gorgonzola cheese, crumbled
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. 1. In a mixing bowl, combine flour and salt. Make a well in the center and add eggs and olive oil. Mix until dough forms.
  2. 2. Knead the dough on a floured surface for about 10 minutes. Wrap in plastic wrap and let rest for 30 minutes.
  3. 3. In another bowl, mix all the cheese filling ingredients until well combined.
  4. 4. Roll out the dough into thin sheets. Place small mounds of cheese filling on one sheet, cover with another sheet, and cut into ravioli shapes.
  5. 5. Bring a large pot of salted water to a boil. Cook ravioli for 3-4 minutes or until they float to the top.
  6. 6. Serve with your favorite sauce.
