Fish Tacos
- 1 lb white fish fillets such as cod or tilapia
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon garlic powder
- ½ teaspoon salt
- 8 small tortillas corn or flour
Cilantro Slaw
- 2 cups shredded cabbage
- ¼ cup chopped cilantro
- 1 tablespoon lime juice freshly squeezed
- 1 tablespoon olive oil
- ¼ teaspoon salt
1. Mix chili powder, cumin, garlic powder, and salt in a small bowl. Rub the fish fillets with olive oil and the spice mix.
2. Heat a skillet over medium-high heat. Cook the fish for 3-4 minutes on each side until it flakes easily with a fork.
3. In a mixing bowl, combine shredded cabbage, cilantro, lime juice, olive oil, and salt. Toss well.
4. Warm the tortillas in a dry skillet or microwave.
5. Assemble the tacos by placing pieces of fish on each tortilla and topping with cilantro slaw.
