Escarole and Beans Recipe
A simple and hearty dish combining escarole and beans.

Main Ingredients
- 2 tablespoon Olive Oil
 - 3 cloves Garlic minced
 - 1 head Escarole chopped
 - 2 cans Cannellini Beans drained and rinsed
 - 4 cups Chicken Broth or vegetable broth
 - to taste Salt
 - to taste Black Pepper
 - ¼ cup Parmesan Cheese grated, optional
 
 
Heat olive oil in a large pot over medium heat.
Add minced garlic and sauté until fragrant, about 1 minute.
Add chopped escarole and cook until wilted, about 5 minutes.
Add cannellini beans and chicken broth. Bring to a simmer.
Season with salt and black pepper to taste. Simmer for 10-15 minutes.
Serve hot, topped with grated Parmesan cheese if desired.
