Ingredients 

Main Ingredients

  • 1 lb fresh asparagus trimmed and cut into 1-inch pieces
  • 1 medium onion chopped
  • 2 tablespoon butter
  • 4 cups chicken broth or vegetable broth for vegetarian
  • 1 cup heavy cream
  • to taste salt
  • to taste black pepper

Instructions 

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  2. Add the asparagus and cook for another 5 minutes.
  3. Pour in the chicken broth and bring to a boil. Reduce heat and simmer until the asparagus is tender, about 15 minutes.
  4. Remove from heat and let cool slightly. Use a blender to puree the soup until smooth.
  5. Return the soup to the pot and stir in the heavy cream. Season with salt and black pepper to taste. Heat through but do not boil.
  6. Serve hot, garnished with additional cream or fresh herbs if desired.
