  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup buttermilk
  • 2 eggs beaten
  • ¼ cup vegetable oil
  • 1 lb crawfish tails cooked and peeled
  • 1 cup shredded cheddar cheese
  • 1 cup corn kernels fresh or frozen
  • 1 small onion diced
  • 1 small bell pepper diced
  • 1 teaspoon Cajun seasoning

Instructions 

  1. Preheat your oven to 375°F (190°C). Grease a baking dish.
  2. In a large mixing bowl, combine cornmeal, flour, baking powder, baking soda, and salt.
  3. In another bowl, mix buttermilk, beaten eggs, and vegetable oil.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in crawfish tails, cheddar cheese, corn kernels, diced onion, bell pepper, and Cajun seasoning.
  6. Pour the batter into the prepared baking dish and spread it out evenly.
  7. Bake for 45 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
  8. Let it cool slightly before serving. Enjoy!
