Ingredients

  • 1 lb Crabmeat fresh or canned
  • 2 cups Heavy cream
  • 2 cups Chicken broth
  • 1 cup Onion chopped
  • 1 tablespoon Butter
  • 1 tablespoon Flour
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste

Instructions 

  1. 1. In a large pot, melt the butter over medium heat. Add the chopped onion and cook until translucent.
  2. 2. Stir in the flour and cook for another minute, stirring constantly.
  3. 3. Gradually whisk in the chicken broth and bring to a simmer.
  4. 4. Add the heavy cream and continue to cook until the mixture thickens.
  5. 5. Stir in the crabmeat, salt, and black pepper. Simmer for another 10 minutes.
  6. 6. Use a blender to puree the soup until smooth. Return to the pot and heat through before serving.
