Ingredients 

Pasta Dough

  • 2 cups All-purpose flour
  • 3 Eggs
  • 1 tablespoon Olive oil

Filling

  • 1 cup Crab meat fresh or canned
  • ½ cup Ricotta cheese
  • 1 tablespoon Lemon zest
  • 1 tablespoon Chopped parsley
  • to taste Salt and pepper

Instructions 

  1. 1. In a mixing bowl, combine flour, eggs, and olive oil. Knead until smooth and elastic. Let rest for 30 minutes.
  2. 2. Roll out the dough thinly and cut into small squares.
  3. 3. In another bowl, mix crab meat, ricotta, lemon zest, parsley, salt, and pepper.
  4. 4. Place a small amount of filling on each dough square, fold, and seal edges to form tortellini.
  5. 5. Boil a pot of salted water. Cook tortellini for 3-4 minutes or until they float. Remove with a slotted spoon.
