Ingredients

  • 4 fillets Sole
  • 1 cup Crab meat cooked and shredded
  • ¼ cup Mayonnaise
  • 1 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Old Bay seasoning
  • ¼ cup Breadcrumbs
  • 2 tablespoon Butter melted
  • 1 tablespoon Parsley chopped

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine crab meat, mayonnaise, lemon juice, Dijon mustard, Old Bay seasoning, and breadcrumbs.
  3. Lay the sole fillets flat and evenly distribute the crab mixture onto each fillet. Roll up the fillets and place them seam-side down in a baking dish.
  4. Brush the rolled fillets with melted butter and sprinkle with chopped parsley.
  5. Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
  6. Serve hot with your favorite sides.
