Ingredients 

Main Ingredients

  • 1 lb Crab meat cooked and picked over
  • 2 tablespoon Butter
  • 2 tablespoon All-purpose flour
  • 1 cup Heavy cream
  • ¼ cup Dry sherry
  • 1 teaspoon Salt
  • ¼ teaspoon Cayenne pepper
  • 2 pcs Egg yolks beaten
  • 1 tablespoon Lemon juice freshly squeezed

Instructions 

  1. Melt butter in a saucepan over medium heat.
  2. Stir in flour and cook for 1-2 minutes.
  3. Gradually whisk in the heavy cream until smooth.
  4. Add the sherry, salt, and cayenne pepper. Cook until thickened.
  5. Stir in the crab meat and cook until heated through.
  6. In a small bowl, beat the egg yolks with lemon juice.
  7. Slowly add a small amount of the hot cream mixture to the egg yolks, whisking constantly.
  8. Return the egg mixture to the saucepan and cook for another 2 minutes, stirring constantly.
  9. Serve hot over toast or in puff pastry shells.
