Ingredients 

  • 1 cup cottage cheese
  • 3 eggs
  • ½ cup flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoon butter for cooking

Instructions 

  1. In a mixing bowl, whisk together the cottage cheese, eggs, and vanilla extract.
  2. Add the flour, baking powder, salt, and sugar. Mix until just combined.
  3. Heat a non-stick skillet over medium heat and melt a bit of butter.
  4. Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  5. Serve warm with your favorite toppings.
