Cottage Cheese Pancakes Recipe

- 1 cup cottage cheese
- 3 eggs
- ½ cup flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 tablespoon sugar
- 1 teaspoon vanilla extract
- 2 tablespoon butter for cooking
In a mixing bowl, whisk together the cottage cheese, eggs, and vanilla extract.
Add the flour, baking powder, salt, and sugar. Mix until just combined.
Heat a non-stick skillet over medium heat and melt a bit of butter.
Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
Serve warm with your favorite toppings.
