Ingredients 

Main Ingredients

  • 2 tablespoon Butter
  • 1 cup Chopped Onion
  • 2 cloves Garlic, minced
  • 3 cups Corn Kernels fresh or frozen
  • 3 cups Chicken Broth
  • 1 cup Heavy Cream
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 lb Crab Meat lump or claw
  • 2 tablespoon Chopped Fresh Parsley for garnish

Instructions 

  1. 1. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until softened, about 5 minutes.
  2. 2. Add the corn kernels and chicken broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. 3. Use a blender to puree the soup until smooth. Return the soup to the pot.
  4. 4. Stir in the heavy cream, salt, and black pepper. Add the crab meat and cook until heated through, about 5 minutes.
  5. 5. Serve hot, garnished with chopped fresh parsley.
