Chicken and Wild Rice Soup

Main Ingredients
- 1 lb Chicken Breast diced
- 1 cup Wild Rice
- 1 cup Carrots diced
- 1 cup Celery diced
- 1 cup Onion diced
- 4 cups Chicken Broth
- 2 cups Water
- 1 teaspoon Salt to taste
- ½ teaspoon Black Pepper to taste
- 1 teaspoon Dried Thyme
1. In a large pot, heat some oil over medium heat. Add the diced chicken and cook until browned.
2. Add the carrots, celery, and onion to the pot. Cook until the vegetables are tender.
3. Stir in the wild rice, chicken broth, water, salt, pepper, and thyme. Bring to a boil.
4. Reduce heat to low, cover, and simmer for about 45 minutes or until the rice is tender.
5. Adjust seasoning if needed and serve hot.
