Ingredients 

Main Ingredients

  • 1 lb Chicken Breast boneless, skinless
  • 1 cup Rice
  • 6 cups Chicken Broth
  • 2 Carrots diced
  • 2 Celery Stalks diced
  • 1 Onion diced
  • 2 cloves Garlic minced
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Parsley

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the diced onion, carrots, and celery. Cook until softened, about 5 minutes.
  2. 2. Add the minced garlic and cook for another minute.
  3. 3. Pour in the chicken broth and bring to a boil.
  4. 4. Add the chicken breast, rice, salt, pepper, thyme, and parsley. Reduce the heat to a simmer and cook for about 30 minutes, or until the chicken is cooked through and the rice is tender.
  5. 5. Remove the chicken breast, shred it, and return it to the pot. Stir well and adjust seasoning if needed.
  6. 6. Serve hot and enjoy!
