- ½ cup unpopped popcorn kernels
- 1 cup brown sugar
- ¼ cup corn syrup
- ½ cup butter
- ½ teaspoon salt
- ¼ teaspoon baking soda
- 1 teaspoon vanilla extract
1. Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper.
2. Pop the popcorn kernels in a large pot over medium heat. Transfer to a large bowl.
3. In a saucepan, combine brown sugar, corn syrup, butter, and salt. Bring to a boil, stirring constantly. Boil for 5 minutes without stirring.
4. Remove from heat and stir in baking soda and vanilla extract.
5. Pour caramel mixture over popcorn and stir to coat evenly.
6. Spread the coated popcorn onto the prepared baking sheet.
7. Bake for 1 hour, stirring every 15 minutes.
8. Let cool completely before breaking into pieces and serving.
