Instructions
Heat olive oil in a large pot over medium heat.
Add onion, bell pepper, and garlic. Sauté until softened.
Stir in Cajun seasoning and cook for another minute.
Add chicken broth, diced tomatoes, and corn. Bring to a boil.
Reduce heat and simmer for 15 minutes.
Add shrimp and cook until pink, about 5 minutes.
Stir in heavy cream and season with salt and pepper to taste.
Serve hot.
