Cajun Corn and Crab Bisque

Main Ingredients
- 2 tablespoon Butter
- 1 cup Onion, chopped
- 1 cup Celery, chopped
- 1 cup Bell pepper, chopped
- 2 cloves Garlic, minced
- 3 cups Corn kernels
- 4 cups Chicken broth
- 1 cup Heavy cream
- 1 lb Crab meat
- 1 teaspoon Cajun seasoning
- to taste Salt
- to taste Black pepper
1. Melt butter in a large pot over medium heat.
2. Add onion, celery, and bell pepper. Cook until softened, about 5 minutes.
3. Stir in garlic and cook for another minute.
4. Add corn kernels and cook for 3-4 minutes.
5. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
6. Use a blender to puree the soup until smooth. Return to the pot.
7. Stir in heavy cream, crab meat, and Cajun seasoning. Cook until heated through.
8. Season with salt and black pepper to taste. Serve hot.
