Ingredients

  • 1 lb chicken thighs boneless, skinless
  • 1 lb andouille sausage sliced
  • 1 cup vegetable oil
  • 1 cup all-purpose flour
  • 1 large onion chopped
  • 1 large bell pepper chopped
  • 2 stalks celery chopped
  • 4 cloves garlic minced
  • 6 cups chicken broth
  • 2 teaspoon Cajun seasoning
  • 1 teaspoon dried thyme
  • 2 cups okra sliced
  • 3 cups cooked white rice

Instructions 

  1. 1. Heat oil in a large pot over medium heat. Whisk in flour to make a roux, stirring constantly until it turns a dark brown color.
  2. 2. Add chopped onion, bell pepper, and celery. Cook until softened, about 5 minutes.
  3. 3. Stir in garlic and cook for another minute.
  4. 4. Add chicken broth, Cajun seasoning, and thyme. Bring to a boil.
  5. 5. Reduce heat and simmer for 45 minutes, stirring occasionally.
  6. 6. Add chicken, sausage, and okra. Continue to simmer for another 30 minutes.
  7. 7. Serve hot over cooked white rice.
