Butternut Shrimp Soup Recipe

Main Ingredients
- 1 large butternut squash peeled and cubed
- 1 lb shrimp peeled and deveined
- 1 medium onion chopped
- 2 cloves garlic minced
- 4 cups chicken broth
- 1 cup heavy cream
- to taste salt
- to taste black pepper
1. In a large pot, sauté the onion and garlic until translucent.
2. Add the butternut squash and chicken broth. Bring to a boil, then simmer until the squash is tender.
3. Use a blender to puree the soup until smooth.
4. Return the soup to the pot, add the shrimp, and cook until the shrimp are pink and cooked through.
5. Stir in the heavy cream, and season with salt and pepper to taste. Serve hot.
