Ingredients

  • 1 can Black Beans drained and rinsed
  • 1 cup Corn fresh or frozen
  • 1 cup Cherry Tomatoes halved
  • 1 lb Shrimp peeled and deveined
  • 1 tablespoon Olive Oil
  • 1 tablespoon Lime Juice freshly squeezed
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 tablespoon Cilantro chopped

Instructions 

  1. 1. Heat a pan over medium heat and add the shrimp. Cook until pink and opaque, about 3-4 minutes per side. Set aside to cool.
  2. 2. In a large mixing bowl, combine black beans, corn, cherry tomatoes, and cooked shrimp.
  3. 3. In a small bowl, whisk together olive oil, lime juice, salt, and black pepper.
  4. 4. Pour the dressing over the salad and toss to combine.
  5. 5. Garnish with chopped cilantro and serve immediately.
