Main Ingredients
- 2 lbs Beef chuck roast cut into chunks
- 3 cups Beef broth
- 5 Dried guajillo chiles stemmed and seeded
- 3 Dried ancho chiles stemmed and seeded
- 1 White onion quartered
- 4 cloves Garlic
- 2 teaspoon Dried oregano
- 1 teaspoon Ground cumin
- 2 teaspoon Salt
- 1 teaspoon Black pepper
- 12 Corn tortillas
- 1 cup Chopped cilantro for garnish
- 1 cup Diced onions for garnish
- 1 cup Lime wedges for serving
1. In a large pot, add beef chunks and beef broth. Bring to a boil.
2. Toast guajillo and ancho chiles in a dry skillet until fragrant. Soak in hot water for 15 minutes.
3. Blend soaked chiles, onion, garlic, oregano, cumin, salt, and pepper with some soaking water until smooth.
4. Add the chile sauce to the pot with the beef. Simmer for 3 hours until the beef is tender.
5. Shred the beef and serve in corn tortillas with cilantro, diced onions, and lime wedges.
