Instructions
Preheat oven to 375°F (190°C).
In a mixing bowl, combine breadcrumbs, melted butter, minced garlic, chopped parsley, lemon juice, salt, and black pepper.
Butterfly the shrimp by cutting along the back and opening them up slightly.
Place a spoonful of the breadcrumb mixture onto each shrimp and press gently to adhere.
Arrange the stuffed shrimp in a baking dish.
Bake for 12-15 minutes, or until the shrimp are cooked through and the stuffing is golden brown.
Serve hot with lemon wedges on the side.
